All day Sourdough, Pretzels, Focaccia & Bagels

Our all day bread making experience covers the beautiful if not mysterious world of sourdough making, hydration rates, kneading techniques and tips on how to create that strong gluten window needed for the perfect homemade sourdough boule or sourdough focaccia bread. You'll also make authentic soft German Pretzels and delicious New York Style bagels. You will be using locally milled unbleached flours and lots of natural ingredients. The classes are small with up to four people which allows lots of one on one tutoring and help from myself. The class cover the various yeasts available and how to use or cultivate them including wild fruit yeasts and commercial yeasts. Included in the day is a homemade freshly prepared lunch of sourdough breads, homemade dips and sharing plates of antipasti with refreshments served throughout the class. Afternoon tea is served later with homemade cake and coffee or tea. Each person will be given all of the ingredients, equipment, tools, aprons and recipes to use throughout the day. Each person also takes away with them a bag of goodies, including bagels, pretzels, sourdough, a booklet of recipes, a jar of sourdough starter and new found skills in a fun, informal, collaborative home kitchen environment. The cost for the day is £95pp with a discount given to returning workshoppers or regular customers of 12%.

Half day Introduction to Bread Making

Our half day introduction to bread making experience days cover the vary basics of bread making using locally milled flours and natural ingredients. You will learn how to create that perfect gluten window to make your own beautiful bread at home with helpful tips and guidance throughout your afternoon. We will cover wholegrain flours and the various white flours as well as which breads are more suited to specific flour grains. You will be given a light lunch of homemade dips, sourdough breads and sharing plates of antipasti along with afternoon tea and homemade cake. Everything will be given to you throughout your afternoon including all of the ingredients, aprons, bowls, recipes, materials and equipment. Each person takes home a goody bag with two loaves of freshly baked handmade breads, all of the recipes, a sourdough starter and new skills to continue using at home! With small groups of 4-6 people it gives you lots of one on one attention and opportunity to ask questions in a fun, informal, collaborative home kitchen environment.
