Is modern day bread making you feel ill? Do you suffer with migraines, headaches, aches and pains or irritibility? If yes is the answer then you might be gluten intolerant or sensitive.

 

Spelt bread is fast becoming the healthier option for lots of people wanting to reduce their gluten intake, or for people who simply can't enjoy eating everyday bread because of the way it makes them feel pysically and mentally. As a baker who's business philosophy is to make and deliver fresh, strong healthy bread, this grain intrigues me on many levels, so I decided to find out a little bit more about this wonder bread and share my findings!

 

What is Spelt bread?

 

In a nutshell its a bread made from an ancient whole grain that contains loads of nutrients in it, due to its low gluten content.

 

The flour has a high water solubility, which makes the bread easier to absorb into the digestive system. Which is why people who have a low gluten tolerance can happily enjoy this bread, without fear of reprisal.

 

What is gluten intolerance?

 

Gluten intolerance is a sensitivity to eating products with gluten in them. The side effects of eating gluten rich products for people who suffer with this sensitivity can range from feeling irritable, dizzy, depressed to having physical discomforts, such as headaches, migranes and aches and pains in joints of the body such as hands and knees. On the extreme end of the scale is Celiacs disease, where gluten has to be omitted completley from the diet.

 

Why is gluten intolernace on the increase?

 

Medical text books dating back to 1888  diagnosed gluten intolerance as a "most common human disease", however the recent uprise in people suffering with this "common disease" can not be ignored!

 

Modern day wheats are cultivated with pesticides, insecticides and fungicides on a massive scale. Our increase in eating gluten rich products is also a causing factor, with bad health foods playing a major role. Pizza's, sweet over processed plastic covered supermarket breads, quick fix sandwiches, and takeway foods are all helping to fuel this increase in gluten sensitvity.

 

So what are the health benefits of Spelt bread?

 

  • High in protein

  • High in B Complex Vitamins

  • High in fibre

  • High in simple and complex carbohydrates

 

All of these contributes to a healthier body and mind, lowers risk of heart disease, type II diabetes and helps to relieve migraines.
